{"id":2942,"date":"2011-07-06T12:20:54","date_gmt":"2011-07-06T17:20:54","guid":{"rendered":"http:\/\/www.sarahsthreads.com\/journal\/?p=2942"},"modified":"2011-07-06T12:36:22","modified_gmt":"2011-07-06T17:36:22","slug":"not-quite-naked-pizza","status":"publish","type":"post","link":"https:\/\/www.sarahsthreads.com\/journal\/2011\/07\/not-quite-naked-pizza\/","title":{"rendered":"Not Quite Naked Pizza"},"content":{"rendered":"<p>I was very disappointed when the Naked Pizza place near us closed &#8211; most regular pizza gives me <em>terrible<\/em> heartburn, but this place had some secret crust recipe that somehow didn&#8217;t bother me, plus it was pretty Weight Watchers friendly.\u00a0 But they closed, abruptly and without explanation.<\/p>\n<p>So I&#8217;ve been on a quest, to make a homemade pizza crust that&#8217;s just as tasty, doesn&#8217;t use up all my points for the day, and doesn&#8217;t keep me up all night.<\/p>\n<p>I think I finally got it right.\u00a0 It&#8217;s not the same, but it&#8217;s really tasty, somewhat healthy-ish, and super easy.\u00a0 I had a hard time finding yeast-free pizza dough recipes, so I thought I&#8217;d share.\u00a0 The best bit is, if you have the various flours on hand already and keep a couple of small containers of plain yogurt in the fridge, you can have pizza on a weeknight in pretty much the same amount of time it would take to have one delivered.<\/p>\n<pre>Multi-Grain, Yeast-Free Pizza Dough:\r\n\r\n1 cup all-purpose flour\r\n1 cup whole wheat pastry flour\r\n3 Tbsp. flax seed meal\r\n3 Tbsp. oat flour\r\n2 Tbsp. corn meal (+ extra for rolling)\r\n2 Tbsp. wheat germ\r\n2 Tbsp. spelt flour\r\n1\/2 tsp. sugar\r\n1\/2 tsp. salt\r\n1\/2 tsp. pizza seasoning blend\r\n2 tsp. baking powder\r\n12 oz. plain low-fat yogurt\r\n2 Tbsp. olive oil\r\n\r\nPreheat oven to 400\u00b0F.\r\n(If you're baking on a stone, put it in the oven to preheat.)\r\n1. Combine all dry ingredients in a large bowl.  Mix well.\r\n2. In a separate bowl, mix together the yogurt and oil.\r\n3. Add yogurt and oil mixture to the dry ingredients;\r\n   mix until a soft dough forms.\r\n4. Turn out onto a floured board and knead dough for\r\n   1-2 minutes.  If necessary, add a little flour.\r\n5. Dust board with a little more flour and some cornmeal.\r\n   Roll dough into a circle.  This will make a large pizza.\r\n   Our stone is not that big!  So, I use about 1\/3 of the\r\n   dough to make an 8-ish inch pizza for the kids, then the\r\n   remaining 2\/3 to make a 12-ish inch pizza for the adults.\r\n6.
